    Teriyaki Salmon

    2 Stücke Lachsfilet
    Salz, Pfeffer
    3 EL Mehl zum Bemehlen

    Teriyaki sauce:
    3 EL Mirin oder Honig
    3,5 EL Soja Sauce
    1 EL Zucker

  • Finnish Salmon Soup

    Finnish Salmon Soup

    500 g salmon
    400 g potatoes firm
    3 leeks
    3 carrots
    1,2 liter fish broth (or vegetable)
    200 ml heavy cream
    1 bunch of dill fresh
    1 lemon
    Salt and pepper

    PREPARE

    • Cut the leeks into thin strips and wash them well. Peel and slice the carrots and cut the potatoes into cubes. Cut the fresh salmon into large cubes. Chop the dill finely.

    SAUTÉ

    • In a large saucepan, sauté the leeks and slice carrots in butter or olive oil.

    COOK

    • Once the leeks have reduced in volume by half, add the potatoes and fish stock. Season with salt and black pepper. Simmer for 15 minutes at medium heat until the potatoes are cooked.

    SALMON

    • 10 minutes before serving, add the salmon chunks and cream. Cook over medium heat for 3-5 minutes until the salmon is cooked. The cream should not boil. Close the lid and wait another 5 minutes.

    SERVE 

    • To finish, add the fresh dill. Serve in a bowl and decorate with more dill, black pepper and a drizzle of lemon juice if you like.
  • Lemon Honey Salmon

    Lemon Honey Salmon

    Ingredients for 2 servings:
    240g salmon fillets, skinless
    1 tsp garlic powder
    2 Lemons sliced +1/4 juice
    1 tbsp honey
    1 tsp Dijon mustard
    1 tbsp oil
    1/4 tsp Paprika

    1. To a small ramekin add: Garlic powder, small squeeze of lemon juice, honey, mustard, oil and paprika. Mix.
    2. In a baking tray lay the lemon slices so they cover the baking tray. Add the salmon fillet on top.
    3. Brush the sauce on the salmon so to cover it well, keep 1/3 of the sauce on a side for later.
    4. Bake at 200C (390F) for 12 mins
    5. Take the baking dish out and spread the remaining sauce on top of the salmon.
    6. Put the salmon under the oven grill for 3-5 mins.

  • Salmon Orzo

    Salmon Orzo

    4 (6-oz.) skin-on salmon fillets
    Salt, pepper, olive oil
    large shallot, halved lengthwise, thinly sliced crosswise
    8 oz. orzo (about 1 1/4 c.)
    3 cloves garlic, finely chopped
    1/2 c. dry white wine, such as Sauvignon Blanc
    2 c. vegetable broth
    1 1/2 c. water
    3/4 c. thinly sliced drained oil-packed sun-dried tomatoes
    1/2 tsp. dried Italian seasoning
    1/3 c. heavy cream
    2 Tbsp. chopped fresh basil, plus more for serving

    Season salmon all over with salt and pepper. In large, deep skillet over medium heat, heat 2 tablespoons oil. Add salmon skin side down and cook until fish flakes easily with a fork, about 5 minutes per side. Transfer salmon to a plate; discard excess oil in skillet.

    In same skillet over medium-high heat, heat remaining 1 tablespoon oil. Add shallot and cook, stirring occasionally, until softened, about 2 minutes. Add orzo and garlic and cook, stirring occasionally, until garlic is softened and fragrant and orzo is lightly toasted, about 1 minute more. Add wine and cook, stirring, until evaporated, about 1 minute.

    Add broth, water, tomatoes, and Italian seasoning. Increase heat to medium-high and bring to a boil. Reduce heat to medium-low and simmer, stirring frequently, until liquid is mostly absorbed and orzo is tender, 12 to 14 minutes.

    Remove from heat. Stir in cream and basil; season with salt and pepper. Return salmon to skillet and top with more basil.

    Oil, Salt, Pepper, Italian Herbs

    1. Turn on the oven (180°C).
    2. Cut the onion into wedges and the salmon into chunks.
    3. Place the salmon, spinach, onion, and tomatoes into a baking dish and put the feta cheese in the middle. Drizzle with olive oil, salt, pepper, and herbs.
    4. Bake for 15-20 mins. After baking, pop the tomatoes, and mix everything thoroughly.
    5. While baking, make the pasta. When everything is ready, mix, and serve.
